Roasted Heirloom Carrots with Feta
Serving Size - 4
- 1 bunch Heirloom Carrots, peeled and sliced into quarters
- 1 T truffle oil
- 1/4 cup feta cheese, crumbled
- handful of parsley leaves
- salt, to season
Preheat oven to 400. While preheating peel the carrots and slice in half and then into long strips. Place in a baking sheet and toss with oil and salt. Place in the oven and cook for 15 minutes, longer for softer carrots. Remove from oven and top with feta cheese and parsley.
