Acai, Pitaya, Matcha... can't get enough of these super foods? Me neither. I have officially joined in on the bowl craze! Similar to salads there is no right or wrong when it comes to a smoothie bowl, it is all up to you based on your taste preference as well as your bodies needs.
Before heading to back to back spin classes this weekend I decided to indulge in a little breakfast in bed. Let's face it, we can all use a morning like that! After being gifted some Pitaya I had to test it out for myself and see what the craze was... is it just about the color and how great it looks in photos or is this superfood packed food really as delicious as it is pretty?
Well it matched up it tastes as amazing as it looks!!!! So this is my warning, there will be a lot of bowls eaten and grammed this summer :)
Pineapple Pitaya Bowl
- 1/2 banana, frozen
- 2 packs Pitaya, frozen (available online, at whole foods and some health food stores)
- 1 cup pineapple
- 1 cup spinach
- 1 Tbsp chia seeds
- 1 Tbsp hemp seeds
- 1 tsp shredded coconut
Place banana, pitaya, pineapple and spinach in a blender and blend until smooth. Pour smoothie into a bowl and top with seeds and coconut.
This combination was amazing! I barely had time to take a photo before devouring this and starting to think of new toppings and combinations.
